I use the Blue Microphones Snowball USB on a PC. It comes with its own table stand and delivers professional-quality audio. You should be able to find one for $70USD. I've been very happy using it for almost a year and a half and have never had a problem with it (which I can't say for other USB devices that I've used). A fair number of musicians use it for recording, so it's more than enough for eLearning.
