E-Learning Screen recording and video solutions – Should b simple, so why isn’t it?

There is something wrong when a free and open source product like Audacity can do it, yet a product that costs hundreds of dollars cannot. That it is not a good idea to have multiple programs open while you are saving and publishing your video. Note : When I say publishing I am also referring to preparing the video for final output.
