Set up a Web-based content collaboration site (wikis work great for this). The SME can then visit the site when they have time and do a structured brain-dump. Use the functional designs, to-be process diagrams, and test scripts to take a stab at learning objectives, an outline, and draft content before you meet with your SMEs.
